Veggie Curry

  • Slow cooker


  • 2 small sweet potato
  • 3 handfuls of red lentils
  • Salt and pepper
  • Curry powder 1 tbsp
  • 1 tin of tomatoes
  • Optional spices cumin, coriander, chilli powder, garam masala, ginger


  • Peel sweet potato and chop into small cubes
  • Place all ingredients into the slow cooker adding optional spices to your preference and salt and pepper to taste
  • Cook on low 6 hours or until vegetables are soft.


Stir in yoghurt at end to make it creamy!
Add greens e.g. spinach minutes before serving Fresh coriander to serve
