Ingredients

small sweet potato

handfuls of red lentils
Salt and pepper
Curry powder
1 tbsp
1
tin of tomatoes
Optional spices
cumin, coriander, chilli powder, garam masala, ginger
Instructions
Peel sweet potato and chop into small cubes
Place all ingredients into the slow cooker adding optional spices to your preference and salt and pepper to taste
Cook on low 6 hours or until vegetables are soft.
Notes
Stir in yoghurt at end to make it creamy!
Add greens e.g. spinach minutes before serving Fresh coriander to serve
